Ahhhh. Yes, dinner was tofu. Rice, tofu, vegies…If you note a tinge of….yes, it’s there. Just a tad. You know, I brought back from the PI, vacuum sealed dangit, dulong and pusit. None of which can be cooked while the other occupants are present. They will surely revolt! And the neighbors might call 9-1-1. They would certainly think they smell something worst than fishy!! I am remembering my good friend, Ronnie Arevalo’s artwork! Will try to post it here…Anyway, DINNER! It was simple as usual. I made tofu cubes, seasoned them, and then baked them.
Here is what I did:
I cut the firm block of tofu into cubes. In a bowl, I mixed EVOO, garlic powder, salt and pepper. I added some oregano too, and just a tiny bit of soy sauce. After letting it marinate for a couple of hours, I lined them up in a cookie sheet and baked them for 15-20 minutes at 375 degrees.
For appetizers, I made some dipping sauce(sawsawan). I minced a bunch of fresh garlic, added some Pinakurat(spiced vinegar), sili labuyo, lemon, soy sauce.. Line the cubes in a dish and made it look pretty.
I sauteed a bunch of onions, added a little garlic, the threw in the stems of the broccoli as well as the tiny chunks of bell peppers. Add a little soy sauce, and then the crowns of the broccoli. A little lemon plus the cubes of tofu are now folded into the mix. Cover for a few to have the flavor develop. Serve with rice, of course!! VARIATION: This is excellent with OYSTER SAUCE! :)
