I was just back in the hottest, most humid part of the Philippines about a month ago. It gets so hot there in the valleys of Cagayan, you could cook an egg on the asphalt! Anyway, while in the place of my youth, we enjoyed the usual Tuguegarao specialties. Longganisa, the varieties of pansit, zinagan and of course, SINANTA! Some of you might remember I posted photos of many dishes we consumed, oy so masarap po!(So very yummy!) Anyway, I did not have the recipes for most at that time. Well, I have finally received a couple of them so here is the first of many that I will be sharing. With some luck, I shall be trying them as well, and will report the outcomes. If you get to try them soon, please feel free to email me your photos as it would be an honor to post them here. :)
Here is my Cousin Emma’s Sinanta Recipe…Thanks Ading Emms for making this for Papa’s special birthday treat!!! :)
Here are the ingredients you will need:
1) Flat Egg Noodles or Fettucini
2) Sotanghon Noodles (Mung Bean Noodles)
3) Butter
4) Onion
5) Garlic
6) Powdered Milk or Regular Milk or Cream
7) Knorr Cubes
8) Squid Balls (These are unlike Rocky Mountain Oysters. Wink!)
9) Shrimp
10) Salt
11) Pepper
12) Atsuete/Annatto
13) Chicken or Pork
Procedure:
1) Place butter in a pan
2) Saute garlic,then put the chicken breast and/or pork, shrimp and squid balls
3) Put water, wait until it boils, then add the noodles
4) Season with atsuete, pepper, chicken cubes and sea salt(iodized salt is bad)
5) Add powdered milk until dissolved. You can also use cream or milk..
6) Garnish with leeks

Im so interested with this recipe. My officemate always cook this for us. And really it was so delicious and a very comforting food for me. Sadly i stopped eating because there’s shrimp added. Which i am allergic to. Is this recipe possible without the seafood ingredients? What could be the substitute? Thank you. ^__^
Hello! thanks for stopping by. This is my cuz, Emma’s recipe and she has made it without shrimps as I am deathly allergic to all crustaceans. I can eat fish so I use fish sauce instead of salt when seasoning and it satisfies my palate perfectly. Hope it does the trick for you too. :)
I am so allergic that I carry several Epipens to be safe. You might ask your doctor about it just in case of cross contamination. My allergies became progressive as I got older since I developed it later in life. Be very careful.
